Matcha Donuts

Some days, you just need frosted donuts. The next time you hear the siren call of this fluffy favorite, enjoy its heavenly goodness with an added kick of nutrition from matcha, almond meal and apple cider vinegar.

Matcha Donuts

Prep time: 15 min
Cook time: 15 min

Ingredients (for matcha donut)

  • ⅛ tsp salt
  • ⅔ cup almond meal
  • ⅔ cup gluten free all purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ¾ tsp matcha powder
  • 2 Tbsp coconut oil
  • ½ cup almond milk
  • 1 Tbsp apple cider vinegar
  • 6 Tbsp maple syrup
  • 1 tsp vanilla extract

Directions (for matcha donut)

  1. Preheat oven to 350˚F degrees.
  2. Grease donut pans with coconut oil.
  3. In a medium bowl, mix all dry ingredients.
  4. In separate medium bowl, mix all wet ingredients.
  5. Add dry ingredients to wet ingredients, mix until thoroughly combined.
  6. Fill donut pans with batter, level with the pan. Bake for 15 minutes, rotating the tray in the oven after 7 minutes.
  7. Flip donut pans upside down and pop donuts onto cooling rack immediately after removing from oven.
  8. Allow to cool completely before frosting.
Yields: 12 Donuts

Ingredients (for donut frosting)

  • 2 cans coconut cream (not milk) chilled in refrigerator for at least 24 hours
  • 2 tsp vanilla extract
  • 2 Tbsp maple syrup (sweetness to taste)
  • 2 tsp matcha powder

Directions (for donut frosting)

  1. Open cans of chilled coconut cream, separate cream and discard liquid.
  2. Add all ingredients to stand mixer with whisk attachment.
  3. Whip on medium-high speed until incorporated and aerated.
  4. Once the donuts have completely cooled, use the back of a small spoon, or a small spatula, to frost the top of each donut.
  5. Top with dried rose petals and lavender buds.
Yields: 3 cups of frosting
