Chocolate Matcha Strawberry Brownies with Chocolate Ganache Frosting

Prep time: 20 min
Cook time: 30 min

Ingredients (For the brownies)

  • 6 ounces bittersweet chocolate, chopped
  • 3/4 cup coconut oil
  • 1/4 cup Tea Forté Chocolate Matcha
  • 1 cup brown sugar
  • 1/2 cup coconut sugar
  • 1 1/3 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 large eggs
  • 1 1/2 tsp Madagascar vanilla extract
  • 1/3 cup freeze-dried strawberry pieces

Ingredients (For the ganache frosting )

  • 3/4 cup heavy cream
  • 6 oz bittersweet chocolate, chopped

Ingredients (Toppings)

  • 1/4 cup freeze-dried strawberry pieces, crushed
  • 2 tablespoons Tea Forté Chocolate Matcha

Directions (Brownie Directions)

  1. Preheat over to 350˚F
  2. Lightly grease an 8×8 pan with butter or coconut oil and set aside.
  3. Fill a medium pot with 1 1/2 inches of water and simmer. Create a double boiler by placing a large bowl over the mouth of the pot and add chocolate pieces and coconut oil, stirring until melted.
  4. Remove bowl from heat. Whisk in brown sugar and coconut sugar. Then whisk in the eggs one at a time, and finally the vanilla extract.
  5. In a separate medium mixing bowl, whisk together the flour, baking powder, and salt.
  6. Add the flour mixture into the chocolate mixture until just incorporated - do not over mix.
  7. Pour the batter into the greased pan and spread evenly. Shake 1/3 cup of freeze-dried strawberries on top.
  8. Bake for 30 minutes, testing with a toothpick to ensure it emerges mostly clean.
  9. While the brownie cools, make the ganache frosting...
Yields:

Directions

  1. In a small pot, heat the heavy cream over medium heat until simmering.
  2. Pour the chopped chocolate into a heat-safe bowl. Pour the cream over the chocolate and let sit for 15 seconds then stir until melted and smooth. The ganache should have a shiny appearance and should have begun to solidify. Let cool slightly, then spread evenly on warm (but not hot) brownies. If the ganache has cooled too much to spread easily, or if you want to use it another time, you can microwave it for 10 seconds and stir to soften.
  3. For the finishing touch, sprinkle crushed freeze-dried strawberries and matcha on top and serve!
Yields: 12 brownies
