So, while it certainly sounds elegant, high tea is distinctly lower-class than the leisure-class tradition of having a "low tea" of light snacks followed by a more elaborate, later supper. Incidentally, "low tea" is a phrase that has largely dropped out of popular use, "afternoon tea" is more representative of how the British would refer to the luxurious tea parties of the scones and crumpets variety (as well as more casual afternoon affairs).

The health benefits of black teas are often overshadowed by those of their green counterparts. This stands to reason since much of the original information about teas and health came to us through Chinese research institutes, and China is a nation of green tea drinkers.
Luckily for us, recent studies done on black teas are very encouraging to those of us interested in our heart and cardiovascular health. It seems the theaflavins and thearubigens found in black teas have favorable effects on the cardiovascular system. Reduced risk of stroke and heart attack are two of the most commonly sited health benefits of black teas.
Our Kosher teas are certified by KOF-K. You may download a printable certificate. In general, tea that isn’t pure tea (because it contains other ingredients) is difficult or impossible to certify as Kosher, though we strive to certify every blend.
Our Organic teas are certified Organic by the USDA. Our production facility is certified by IMO-Switzerland, a USDA accredited certification agent. We are striving to source every possible tea and ingredient from organic farms. More teas will be certified Organic in the future.
The caffeine level in a cup of tea can vary by tea type, steeping practices and even the particular tea harvest. We use the following designations as guidelines for the caffeine levels of our teas:
Robust, high caffeine teas; 50-100mg
Lower caffeine teas with shorter steeping times; 30-50mg
Tea/herbal blends with less than 30mg
Decaf tea retains a tiny amount of caffeine
Herbal teas are 100% caffeine free
These steeping guidelines produce the best results for our palates. Use them as a guideline, but you may certainly experiment and find the best results for yours.
