Green & White Teas
While tea does have varietals, similar to wine, all tea comes from the same species of plant Camellia sinensis. The difference between the major tea types (black, oolong, green and white) is in the way the teas are processed after harvesting.
Green tea undergoes very minimal oxidation, meaning that it is exposed to air for one to two days after harvest. White tea is immediately heat shocked to prevent oxidation, and then dried. The difference is really more of a spectrum than a clear distinction, both kinds of tea taste fresher and lighter than blacks or oolongs. They often have grassy overtones and a clean finish. Greens and whites should be steeped at less than boiling water for 2-4 minutes. We recommend 190°F, but, as with any tea, you can experiment to your own taste.
